Slow cooker Moroccan chicken

This will either be tremendously delicious or completely awful, but I have a feeling it’s going to be good, so I’m going to write down what I did before I forget.

1 onion, sliced
6 cloves garlic, minced
1 1/2 pounds baby carrots (or whole carrots cut up in 3″ lengths)
2 cups chicken stock
8 chicken thighs, skinned
1 14-oz can tomato sauce
1 tsp salt
1 tsp black pepper
1 tsp cumin
1/2 tsp cinnamon
1/2 tsp cloves
2/3 cup snipped dried apricots
1/2 cup dried plums, halved

Put down the onion and garlic in the bottom of your slow cooker, add carrots on top. Pour broth over top. Layer chicken on top of that.

Mix spices into tomato sauce. Sprinkle the fruit over the chicken and pour the tomato sauce on top. Cook on low for 6-7 hours, until chicken is done.
